Chocolate Pecan Pie :: National Boss's Day

To honor our bosses today who are always sweet and hardly ever nutty. We’d like share an easy recipe from our DUCK AND RUN cookbook, p. 147, for our busy hardworking Boss’s.

Ingredients:

½ c. butter

4 eggs

1 c. sugar

1 c. light corn syrup

1 c. chocolate chips

2 c. pecan halves

1 unbaked 9 inch pastry shell

1 tsp. vanilla

In microwave melt butter. Stir in eggs and beat well. Stir in: sugar, syrup, vanilla, chocolate chips, and pecans.  Place in 9 inch pie shell. Bake in 425 degree oven for 10 minutes, then lower heat to 350 degrees and bake 40 minutes longer or until a toothpick inserted comes out clean.
