Spicy Grilled Shrimp

Since this month is National Grilling Month, here is a grilling recipe from our cookbook (pg. 106)

{Spicy Grilled Shrimp}

• Ingredients • 1 large clove garlic, 1 tbps. coarse salt, 1/2 tsp. cayenne pepper, 1 tsp. paprika, 2 Tbsp. olive oil, 2 tsp. freshly squeezed lemon juice, 2 lb shrimp in the 18 lb range (peeled, rinsed, and dried), lemon wedges

• Instructions • Start a charcoal or gas grill or preheat the broiler. Make the fire as hot as it will get and adjust the rack so that it is as close to the heat source as possible. Mince the garlic with the salt; mix it with the cayenne pepper and paprika, then make it into a paste with the olive oil and lemon juice. Smear the paste all over the shrimp. Grill or broil the shrimp 2 to 3 minutes a side, turning once. Serve immediately or at room temperature with lemon wedges.
