Soft Sugar Cookies

Today is National Sugar Cookie Day. Here's a recipe from our Duck and Run cookbook:

Soft Sugar Cookies

Ingredients: 1 c. butter, 2 eggs, 1 c. powdered sugar, 3/4 c. vegetable oil, 4 c. + 4 tbsp. flour, 1 tsp. cream of tartar, 1 tsp. soda, 1 tsp. salt, 1 tsp. vanilla

Instructions: Cream butter, eggs, and sugar. Sift dry ingredients and add to cream mixture. Add oil and vanilla. Form into ball and chill overnight. Roll into 1 inch balls. Roll balls in sugar and press on cookie sheet with the bottom of a glass. Bake at 350 degrees for 12-14 minutes. Enjoy!
