National Homemade Soup Day :: PVB Cookbook

On a cold snowy day like today, soup is a great recipe for warming up!



Here is a recipe from our Duck and Run Cookbook on page 25.

Steak Soup

{Ingredients}
1 stick butter
8 c. water
1 1/2 lb. ground beef
1 c. celery
2 c. frozen mixed vegetables
2 Tbsp. powdered beef bouillon
1 c. flour
1 (1 lb.) can tomatoes
1 c. onion, chopped
1 can carrots
1 Tbsp. seasoned salt
1 Tsp. black pepper

{Instructions}
Melt butter in a large pan. Stir in flour to make a smooth paste; slowly add water. In frying pan, sauté ground beef; drain off fat. Add meat to soup with chopped vegetables and seasonings. Don't add the carrots until the last hour of cooking. If you use raw carrots, add along with other vegetables. Bring to a boil and simmer for 2 to 3 hours or until vegetables are cooked. The longer you simmer, the more flavorful the soup. May be frozen for later use; freezes very well.
